"Vegetable? What No Meat?"


These cakes made with black beans is an excellent choice for the vegetable only diner. It's a delicious dish for any meal, party, or snack. They are crunchy on the outside and offer a little heat when you bite into it. You can serve them along with other finger foods, a soup, or salad. You can also make them any size you would like.

Here is a list of characters, if you use fresh black beans, soak them overnight, cook until almost tender. Finely chopped onion, jalapeno or other hot pepper of your choice seeded and diced. Olive oil, finely chopped fresh garlic, red onion, cilantro, scallions both white and green parts.

You'll need chili powder, cumin, cayenne pepper, black pepper, lime zest, and panko bread crumbs.

Drain beans, add zest of lime. Saute onions, garlic, hot pepper in oil until onions are caramelized. Blend in cumin, chili powder and cayenne. Cool.

Depending on your preference of whole beans, mash one-half of beans into a paste combine together and blend with cooled onion mixture. Refrigerate until cool enough to handle.

Shape into patties and coat with bread crumbs. Brown over medium heat to produce a crust on both sides. Place in 300 degree oven until heated through.

Place on decorative platter lined with your favorite lettuce leaves topped off with a spoonful of sour cream. Serve whole-wheat buns on the side. You can add other accompaniments such as avocado, bell peppers, apples, or tomatoes. Garnish with epazote-a lemon-mint vegetable/herb.

Hard boil your eggs first, then toast bread. Whisk together oil, lemon juice, and vinegar. Drizzle over salad mix. Plate bread and place salad on top. Cook eggs. Remove and place on top of salad mixture and season.
