You know you can spice up those sauces and make your dressings drip with a velvety texture. Do you want coolness or take it to another level without overpowering your main dish?

Here are two spreads for your next duck, turkey, or poultry entree. If you like cranberries it's great at Thanksgiving. When mangoes are in season the next recipe makes a great chutney for a sliced baguette, poultry, or roasted pork.

Here's your Cranberry Spread

Fresh cranberries, finely chopped onions, water, white vinegar, sugar, cloves, ground cinnamon, ground allspice, celery seed, freshly ground black pepper.

Rinse cranberries. Combine with onions and water. Cook until cranberries are soft. Puree the cranberry mixture, return to pan, blend in remaining ingredients. Cook until thick. Cool. Strain if you desire, place into glass containers and refrigerate. Bring to room temperature before serving.

3 large mangoes, cube in small sections and salted, 1/2 jalapeno pepper or use any pepper you want, a whole chipotle if you like heat, 1/2 teaspoon garam marsala (or you can make your own by combining cumin, nutmeg, cinnamon, black pepper, chili powder, mace, cardamom, fennel, fenugreek, and coriander. The spices are ground and then toasted on a hot griddle)1 1/2 cups sugar, 1 cup white vinegar, 1 tablespoon grated ginger, 1/2 cup dates.

Combine vinegar and sugar in pot, boil and simmer for five minutes. Combine remaining ingredients in a bowl, mix well. Add to vinegar mixture after five minutes. Simmer for one hour, stir occasionally. Knock Out Chutney

This saucy sauce is good with chicken, duck or grilled tuna.
