A Delicious Carrot Soup That Is Totally Vegan

Here’s the recipe for Creamy Carrot Cashew Soup, I medium onion chopped, 4 cloves garlic, minced, 2 tablespoons olive oil, 2 pounds carrots, peeled and cut into equal size pieces, 4 cups vegetable broth, ¾ cup raw cashews, ¾ cup water, ¼ teaspoon dried sage, ½ teaspoon salt, ¼ teaspoon black pepper, 2 teaspoons lemon juice, 2 tablespoons nutritional yeast. Cooking tip: The next time you make vegetable stock and there is some left over, let the stock cool completely and place in ice cube trays and freeze.
